I've been down a rabbit hole on bacon brands lately and was wondering what you fine foodies think.

Always heard Benton's was the best. Ordered some and it was super smoky. To the point the wife and kids wouldn't eat it. I think it would be good in a dish but not stand alone.

Nueske's out of Wisconsin has been my personal favorite. A little more balanced than Benton's.

Wayne Jacob's slab bacon is money as well but requires you to slice it.

What am I missing?

I like the Boars Head Butcher Cut extra thick and can get it at the grocery, no need to order online.

That's what I went with until I started making my own.

Matter of fact, I have a 7 lb. pork belly marinating in the fridge that I will smoke next Saturday, along with some of my homemade andouille sausage I will case up on Friday night.

tried it last week. Absolutely terrible imo compared to Wright and Kroger brand thick cut.

Feels like there's not a lot of consistency with bacon. I've had good and meh bacon from the same brand.

I was at Rouse's a couple of weeks ago and saw some Pork Belly and it was around $7 a pound... I laughed and moved on...

I spent some time in Magnolia Mississippi and there was a little grocery store that sold thick cut bacon with the rind .. I could that stuff all day long... I doubt that store is still there..

With all brands, the fat to meat ratio has been ridiculous the past few years. 80% fat/20$ meat.

My wife picked up the pork belly from Costco for $3.99 a lb. and it was perfect for my needs. I cut it in 2, seasoned it and put it in gallon freezer bags to marinate for a week before I rinse it, let it dry to make the skin tacky and then smoke for several hours.

Rouses has a shite selection of bacon.

Whole foods has a pretty decent selection.

Fresh Market's "market style" bacon it's really good.

It's hard to find a good selection of uncured bacon

Why do you like uncured bacon? I've noticed that's all Whole Foods carries. Fresh market has a wider selection.

Our go to is Wright's, but I keep Benton's on hand. The OP is correct about Benton's being best "in" things.

Benton's has very heavy smoke and is mostly salt cured. Diced and rendered, it makes some amazing baked beans.

The only time we eat the Benton's fried is on Christmas morning when I make fresh sourdough cinnamon rolls. The smells in the house are incredible.
