Experimentalism with steaks: charcoal vs gas

Charcoal or gas? Which one makes a better steak. I cooked on gas for years and was very happy with my steaks. I now cook with charcoal most of the time.

I took two prime NY Strips.


I salted them and did the reverse sear method on both.




I let them come up to 120 degrees and moved them off the grill while waiting for the grills to heat up. The charcoal was not an issue because of the two zone cooking setup with the slow n sear. I had to wait for the gas grill to come up to temp.



I seared both steaks for about 90 seconds on each side.



I finished the steaks and the cut them open. The one on the left is charcoal.


The results were mixed. The family was split on which on tasted better. The gas grill steak had a cleaner taste that allowed the seasoning to come through. The charcoal steak had a more complex flavor where you couldn't taste the salt/pepper as clearly because of the charcoal flavor.

How do you get your genesis over 600? Mine tops out around 475 or 500

You do all that and the payoff is that they taste different because of the charcoal and no agreement on the best

The texture looks leathery. You should be able to get a better crust.

If you do it again, can you throw them on at high heat instead of reverse sear.

This is a 2 burner Spirit II that I bought a couple of weeks ago for $57 at Lowes. It will get up over 600.

I was using the cold grate method on the kettle to avoid the char and get a better Maillard reaction. I tried to imitate that on the gas grill by sliding g the steak around. That is why you don't see defined grill marks on either one.

I have both. Gas is easier but the taste is much better with charcoal. Give me charcoal.

I tend to agree that I like the flavor of charcoal better, but it was closer than I thought it would be. My family was split 2:2, though.

I need a good gas grill. Charcoal is just too much work for one person.

I got the gasser because it was a great deal. I also will use it for quick weeknight cooks and as an overflow when I'm cooking muliple things and don't have enough space on the kettle.

Now would be the time to get one. The Lowes near where I live has a few grills for 50% off because they were floor models with cosmetic damage. I was happy to get a Weber at a huge discount because it was missing the grates, ignitor, and grease trap. As I was walking out the door with the grill, they found the grates, so all I had to get was the ignitor and grease trap.

Try them by burning 6 pieces of pecan or oak down to white coals. Grill them over the coals. It’s not even a fair taste test.
