Ever had hard boiled eggs in spaghetti?

Trying it for the first time tonight. Heard from a lot of people how good it is. Some say they can't eat spaghetti without it. Any truth to this? Anybody heard of this?

Probably the same nasty people that put eggs in gumbo.

I ate it every Sunday at my Italian friends houses growing up. It's very common and very good. Most used it as a way to stretch it because eggs are cheaper than meat so they would have meatballs and hard boiled eggs. Most had many children and multiple generations living in the house which means many mouths to feed.

Most old Italians would say they either do it or know people that do. It's not uncommon at all. Try it.

I absolutely love eggs in red gravy. My MIL makes this every holiday and it is awesome.

Who the frick puts eggs in gumbo, potato salad yes, but not eggs. Gross.

It's a Sunday tradition for an Italian friend of mine as well. It's actually pretty delicious.

It's the same damn principle as putting eggs in a red sauce...which you admittedly love. Boiled eggs in a good chick and sausage gumbo are awesome. Expand you mind.

In the house I grew up in, my neighbor was Italian and did this. I remember liking it.

Since I love hard boiled eggs in shrimp stew, I'd probably like this, too.

For gumbo, Mom would drop in raw eggs and hard poach them (this was to stretch the leftovers after we'd eaten most of the chicken).

Sure.

Better yet, or at least as good, boiled eggs in a shrimp stew. Crack them open with your fork on your plate, spoon on extra gravy, maybe some crystal hot sauce.

My old great aunt used to make this for us all the time, and those who haven't had it can hate all they want, but eggs are great in a red gravy.

Instead of hard boiling them, just crack them into the gravy and hard poach them. Let them cook before you stir it, or you'll have red gravy omelette.

my great grandmother and grandmother did/do....I like it....they also put potatoes and round steak in their red sauce

love boiled eggs in a gumbo. delicious. i've never had them in a red sauce but i'd certainly be willing to eat it. i'm a bit of an egg slut...love eggs in just about any form.
