This post screams “my mother in law”. She goes to places like Walk Ons and set expectations way to high. Orders things like steak and pasta dishes and then whines about how it’s not great. It’s a fricking sports bar!

Why? Like I said this is a Louisiana Restaurant chain and they are serving (apparently crappy) gumbo and ettouffee. If you are playing that card you know French bread is as much of a staple with them as rice. You can get French bread at any HEB as easy as you can Texas toast so it’s not like their industrial food service supplier can’t get it.
Now expecting Leidenheimers would be a bit much.

But I don’t go quite that far. Some fine dining establishments, certainly, walk ons, I’m not going past a burger.
Other general seafood rules I have
No “crabmeat” dishes unless it’s a find dining establishment I trust, also No softshell crabs at restaurants where they reside on a menu all yr, I don’t care to eat crabs that have been swimming in Chinese shite water.

The gumbo at Walk on’s in Arlington shouldn’t be any different than BR or Laffy or Knoxville. It’s not like T-neg is in the back making a roux in grandma’s magnalite pot at any restaurant

I didn’t know that French bread was considered a de rigueur accompaniment to etouffee and gumbo. While I might serve French bread, I might also serve a dinner roll of some kind. No one has seemed surprised or disappointed.
But then my gumbo and etouffee are pretty good.
