First thing I thought when Pappadeaux was mentioned. Too too much. Bleh.

Walk ons is fine. Even here at ground zero South La it is just fine. In Texas? Expectations…LOW.

I have lived in Dallas for 17 years after leaving New Orleans. I wouldn't even think of ordering any Louisiana style dish here in this area. This isn't rocket science.

Walk ons does serve Texas toast rather than just French bread even in Louisiana

Your first mistake is going to walk ons and expecting those menu items to be typical Cajun fare

A friend of mine who's a banker close to this location always recommends this for lunch. It's not great by any standards, but I never pay.

Unfortunately there's just not many good Cajun options in Tarrant county with the exception of Tributary in Fort Worth.

Most people have air conditioning. I eat it whenever.

And for a place from Louisiana that plays the LSU connection they should be able to deliver a serviceable gumbo and ettoufee. I mean what the hell if you are serving it why not get the recipe right. It’s just as easy to serve a good gumbo as it is to serve a crappy one.

All of it is made in a commissary and shipped to the locations so it’s not like Kent Rollins is whipping it up in the kitchen. Those are two relatively easy dishes to cook on a large scale and shouldn’t be any harder than chicken noodle soup.

It’s more of a stew but a lot of restaurants include it under the soup section.
