I am not condoning this.... but my 80yo father says he'll never do them differently again, and he's bringing some over on Saturday to demonstrate the method in my kitchen, and I'll try to post a review.

People smoke meat because they like the smoke flavor too. This method doesn't get you there.

if you are looking to cut time on ribs do hot n fast, works just fine.

3 hours

or do babybacks on low smoke temp about the same time.

funny part of that whole setup is he already has the fkin thing on coals.

Roegels on Voss has the best ribs and they're smoked. Kent needs to try 'em sometimes.

If you can't smoke baby backs to fall off the bone tender (better known as overcooked) in 4 hours then I don't know what to tell you. Hour and a half at 275 then wrapped for an hour, unwrap, sauce, set it for 15 minutes and you're done.

Easiest non smoke method is the Rendezvous way.
Dry rub
Thinned out bbq sauce with apple cider vinegar for mopping.

Bbq pit @350

Dry rub on ribs a couple of hrs before
On grill and flip every 10 minutes and mop with sauce every time you flip.
Takes around 7-8 flips or 1 hr 10-20 minutes, go until bones are loose.

I've done this method in the oven the last few times and the ribs come out great. Put the rub on 20min before putting them in the oven. Bake 1hr:20min Add a bath of sauce/ apple cider vinegar or fruit juice with the wrap-bake another hour. Then sauce them up and sit 15/20 minutes and done.

Charlie Vargas [the inventor of Rendevous Rub in Memphis] doesn't even pre-rub them. The Rendezvous goes on after they are cooked [grilled over charcoal like a pork chop]

And I love that style of rib.

A guy opened a rib joint near us who cooked them at a high temp (350+) for a little over an hour. His ribs were great. His process was to heavily coat them in a concoction he created. It was mostly canola oil with some spices. The oil burned off slowly and the spices then set in. I bought a jar of the concoction and tried it once, with good results.

That "Cajun Dirty Rice" is way more of an abomination than the ribs. Cowboy Kent and whoever wrote that cookbook should both be arrested.
