Thats what I use. Gallon and a half max oil capacity. Works awesome. I always set it up on a table outside.

A simple wok makes for a great frying vessel ($30) and with your previous Asian posts here, I would guess that you already own one. I'm sure you have a thermometer to check the oil temp too so you're all set. A wok is all I've ever used to deep fry with at home.

I've had a warning pro for a while now. It has been excellent. 1 gallon of oil. It can cook a good bit of food.

I used to have one of those rival electric woks, never thought of using that. Would be cheaper and more versatile than an electric fryer.

My Uncle has this 14" x 30" x 4" deep rectangular cast iron pan that he uses to fry stuff. He also uses it for fajitas and a flat tip grill for steaks and eggs. I'm going to get me one soon. A gallon of oil fills it about half way which is perfect.

I just use my butterball XL turkey fryer for large jobs.

Yep. Gave it away. Never used it. I just use the cast iron.

I fry beniets for my girls more Sundays than I don't, and we have a great system worked out. Nothing special about the fryer, but after the oil has time to cool, about the top 80% of the oil gets poured through one of these back into the "used" oil container. Then the next week we put that back in with just a little bit more fresh oil to top it up to the line. Everything is clean and back up in the pantry. Point being, with a system of oil containers and cleanup, you will be much more willing to fry something up, and not think of it as a pain to get everything together and waste a bunch of oil.

If the fish is large enough, the cheek meat is some of the best eating on all of the fish. We used to fight over it.

Are you squeamish around head-on crawfish and shrimp as well?

I have the strainer in your picture and another one which has a fine wire strainer in the middle. I like the latter one best. Use them all the time to strain the oil into gallon oil containers until I use it again. I just save the big peanut oil plastic containers. They work great. I keep oil used for fish or seafood in a separate container.

I have three propane 'fish cookers' ~ One homemade. ~ Two jet burners and various sizes of cat iron pots etc.

Not crawfish and I don't eat shrimp that often especially not head on.

Wolfgang Puck Bistro Flash Fryer

This one works really well and drains/stores the oil in an inside container. It was about $100 online. We've had many flash fryers over the years but this one was the best one we've purchased for the money.
