I barely feel comfortable leaving something simmering when I need to drop a deuce.

Same here, it's not very often but I'll leave a stock or gumbo simmering and go run an errand. I've never once had my gas stove just randomly blow out, I make sure nothing flammable is nearby. I suppose it's one of those things that the chances of something happening are certainly low, but not zero.

Not in a million years would I leave anything cooking on the stove while I'm away from the house.

I use an as-seen-on-tv portable induction cooktop outside for all my long simmering, including while away. I feel safer with the electric timer, GFCI and the best part, gets smells outside.

If I’m leaving for 15-20 minutes, I crank the heat up on the stove to almost a boil, then shut it off.

This. If it's a short errand, I might leave a dutch oven simmering, but then I am just as likely to turn it off and turn it back on when I get back. In a covered dutch oven, for instance, it's not going to cool down much in 15 minutes.

The builder put a vent almost directly above the stove which is not optimal. Normally, I leave it closed because this had happened before while I was in the kitchen so I just re-ignited the flame. Someone obviously opened it (I think my wife accidentally knocked it open when she was dusting recently) and I didn't notice it. The flame was on low so it didn't take much to kill it. Anyhow, it scared the life out of both of us. The vent is permanently closed now and I won't leave the flame burning unless we are in the kitchen.

jesus some of yall are afraid of everything, jesus christ. I get not leaving a gas stove on, but the above is just fricking stupid old people shite. Sound like my wife and her mother, scared of everything in life. Do yall go around unplugging the toaster adn air fryer to be safe too?
OP, i have burners outside, if i have to leave it on for a long time and have to leave, i put it on out there. if the wind blows the burner out, it just goes to atmosphere. also will leave in stove sometimes.
as far as a stove flame getting blown out....i have never ever ever had that happen.
