Anytime we have stuffed bell pepper, we have mashed potatoes along with it.

Last night my daughter brought up that it seemed odd to have 2 staples in the same meal (rice and potatoes)

What side dish do you have with your beef/rice stuffed bell peppers?

Whatever I feel like. Didn't realize there's rules for stuffed bell pepper sides. You want mashed taters, have mashed taters.

It depends on the variant.

If a standard stuffed bell pepper, then I will often do maque choux as a side.
If a 'mexican' variant then I'm making a street corn salad as a side.
If a mediterranean variant, then some pita and hummus or a greek salad.
If an asian variant then a side slaw with edamame.

All depends on how I'm preparing the peppers. I find the filling to be on the heavier side so I prefer a lighter side that compliments it.

meat and vegetables
I like squash and eggplant with Italian sausage, I usually use stale bread as the binder

I’m guessing a bread crumb sort of dressing. I’ve made them that way and the way with rice as a binder. Sometimes a bit of both.

The Peruvian dish, Lomo Saltado, is a soy/vinegar-based stir fry of beef, onions, bell peppers, and tomatoes, served over French fries with a side of rice. Two starches, and it works.

Can also be made with chicken or shrimp.

I typically do not serve two starches for normal, everyday meals. But, I'm sure that I'd eat it...

My grandma did ground meat, breadcrumbs, and shrimp. I always ate the stuffing, don't like bell peppers. I will allow mashed potatoes as a side.

Never have. Reminds me of the plate lunches server in certain places where it's meat and three, with three of the four available sides are starches: fries, potatoes, Mac-n-cheese
