Did anyone see Top Chef last night?

In your opinion, how authentic were those New Orleans dishes?

not very. my wife and i were astounded that someone could make a "gumbo" in 20 minutes.

here's her award winning gumbo from top chef website.... 20 minute "gumbo" over grits? Wine in it?
Crayfish and Andouille Gumbo Over Stone Ground Grits
Prep Time: About 30 Minutes
Serves: 3-4
Directions:GRITS
1. Bring stock to a boil with bay leaf.
2. Whisk in grits, season with salt and pepper.
3. Continue to stir until creamy; about 15 minutes.
4. Stir in butter, then chives. Adjust seasoning.
5. If necessary, thin with more chicken stock. Consistency should be that of
oatmeal or Cream of Wheat.
GUMBO
1. In a large skillet, heat oil on medium heat. Sweat onions, then add garlic.
Season with salt and pepper.
2. Add in diced celery and peppers. Season. Cook until soft.
3. In a separate small skillet, sauté andouille until browned. Add to vegetables.
4. Stir in collard chiffonade. Combine well and continue to stir until wilted.
5. Pour in wine and let reduce.
6. Pour in chicken stock. Then, stir in 2 T light brown roux. Adjust seasoning.
7. Throw in crayfish tails at last minute, so they don’t overcook.
8. Serve gumbo over grits.
COURT BOULLION
1. Put all ingredients in pot and bring to a boil.
2. Cook crayfish in small batches for about two minutes each.
3. Let cool. Twist tails off and save at least four bodies for garnishing each
serving.
4. Cut tails in half and pull meat out. Set aside until ready to use.

1 T roux (equal parts butter and flour cooked to light brown.)
20 crayfish (cooked for 2 minutes in court-bouillion)

water
1 lemon, halved

but in the end the New Orleans Saints won!!!

I can't believe that Jeff is gone but Leah is still there. That show makes seemingly arbitrary decisions when it comes to kicking people off.

i think its obvious that leah and hosea drama = higher ratings, while jeff is pretty boring and monotone. fabio should have gone home but he is probably another fan favorite

Leah has to be the next to go. I think Stefan is the best chef, even though he's a punk. Fabio = good entertainment.
Leah and Carla are weakest, but Jamie needs to cook with other things besides scallops, corn and root purees.

I think they were able to pre-cook stuff (i.e. the roux).

I thought the same thing, but I couldn't tell if that's what she had done.
It looked like she added the vegetables to a mighty blond (bordering on white) roux, during the 20 minute competition.
Either way, it was shocking that she won with that abomination.

I agree, everytime I watch top chef and iron chef, I say to my self if the judges didn't know who made it the results would turn out different. You can't honestly tell me that some of the dishes the competitors make on iron cheif aren't better than bobby flay's crap. But because he is bobby he always gets the points. Same thing on Top chef, if the judges hate x person because he is big or she is un attractive, it changes their vote. However I think if it was a blind taste test different results would happen

nice assessment. im ready for carla to be gone. she gets on my nerves. i was rooting for the asian guy, now i guess im pulling for hosea.

Jeff absolutely deserved to go home. A big point of the show is to learn, take advice and grow. He hasn't done that. Repeatedly he's been told that he's all over the place trying to make too many ideas come together and it just doesn't work. He's even repeatedly said it about himself. Yet every single challenge he hears the same critisism from the judge and he ends up saying the same thing to himself...yet he never changes.

I was floored that she won! I would have refused to vote for her that WAS NOT GUMBO! All that tells me is that the judges have no idea what a gumbo is and it pisses me off that they kicked a guy off because he wanted to make a dish that he didnt have enough time for but then allowed this atrocity and even gave her SB tickets because she was a dumb arse.

the word gumbo was used loosely...you had to know that was the case when they said they only had 20 mins.
im sure the judges know what gumbo is dude.
for all we know, it could have tasted the best. It didnt have to taste exactly like an authentic New Orleans gumbo to win. For obviously it wasnt your usual gumbo. Just had to taste good. She won. Big deal.
