I agree, and make mine like yours.

But much better cooks than me mix surf and turf for gumbo.

Caswell at Reef in Houston served us shrimp/crab/andouille for our x-mas party.

And just this weekend, one of the restaurants in the Superdome Hyatt served me shrimp & andouille.

They all taste good.

Land critters go with land critters, sea critters go with sea critters.

With most of SE being Catholic, I think the main reason for seafood only gumbo was to eat on friday. It was like that in my house.

Seafood w smoked pork is common all over the eastern part of Acadiana. Bayou people put seafood w anything and everything. Smoked sausage, smoked ham, andouille, etc all are used freely with shrimp, crab, and oysters.

I dont put sausage in a shrimp and crab gumbo. I wont put shrimp in a chicken and sausage gumbo either. The above are Cajun gumbos, mix them and its Creole gumbos.

Correct.

That being said, I usually don't put sausage in my seafood gumbo, but I have had it restaurants, it fine if the sausage is good. Also had very nice gumbos with some tomatoes. I have no idea where this BS came from of "NO TOMATOES IN GUMBO OR JAMBALAYA! That is just narrow minded and ridiculous.

People frequently ask me why I am such a good cook, simple answer, I have no recipes set in stone. I'll make something one way until someone shows me an improvement, then I change.

I don't care for tomatoes in gumbo. I'm not narrow minded, but I do know what I like and what I don't. I don't love jambalaya especially red.

Definitely not a Cajun vs creole thing. Plenty of Cajuns and Creoles mix seafood and other ingredients. Chicken, sausage, and oyster is a beloved combo all along bayous Lafourche and Terrebonne. In SE la (as opposed to Lafayette/prairie), seafood was/is a common, cheap, everyday ingredient....not a special or rare thing.

I've been known to put diced tomatos in my gumbo's and I've yet had anyone turn a bowl down. My recipe is published in the St. Louis Jr. League Cookbook and i wrote a can of diced tomatos.

I'll even put a bit of Tasso in it if I have it and I've put crawfish and even poule deau and rabbit. Never had a bowl not empty that I can recall.

Might not be rare but I dont care for 100 different flavors in a gumbo. A cajun chicken and sausage gumbo with tasso and smoked turkey necks is the best of all gumbos. No seafood gumbo can touch it and I love seafood.

I dont ever put crawfish in a seafood gumbo either though. For me its shrimp and crab only. I would do oysters but my family doesnt eat them. Crawfish overpowers everything in it, so I dont care for it in gumbo.

To each his own, but I grew up with shrimp and crab gumbo, and chicken and sausage gumbo. Offshroe I have eaten chicken and sausage with shrimp and crab mixed and while its edible, it has too much going on. Its not bad but its not like my gumbos.
