Always heard the same thing too. Maybe if you went with a lightly smoked sausage. I think Emeril has a shrimp and sausage gumbo recipe

My family never mixed seafood and land animals unless it was a shrimp and salt meat jambalaya.

Look at what the definition of gumbo is and why it was made.


Gumbo is all the meats.

Sausage is in every gumbo i make. I don't use as much for my seafood gumbo as i do my chicken or duck gumbo.

I put Andouille and fresh pork sausage in chicken gumbo, Just shrimp and crab in seafood gumbo.

I always keep them separate... but I wouldn't complain if someone made me a shrimp and sausage gumbo because I love shrimp and sausage.

For gumbo, I don't mix meats and seafood. However, I don't strictly follow not mixing them at all. I like bacon wrapped shrimp, for example. I think some shrimp and grits dishes can be enhanced with bacon or sausage. It just depends on the dish, but I much prefer seafood gumbos to be seafood only with a strong seafood stock. I think sausage can over power the seafood flavor in gumbo.

Never heard of any rules about what you can include in gumbo (except the dreaded tomatoes).

I never put sausage or any kind of non-seafood meat in my seafood gumbo. However, I will often make my roux out of bacon drippings.

Yeah, their really aren't any rules to gumbo except make a roux, use the trinity, and no tomatoes.

My dad tells me a story of when he was a kid. My dad would go shoot squirrels, ducks, rabbits, robins, doves, etc... throughout the week and bring them back to my grandma. She would take them, skin/pluck them and throw the meat in the freezer, then on the weekend make a big gumbo with whatever they killed that week.

My Dad did this when we were growing up

we would call it "wild man" gumbo

if lives in LA woods, it probably ended up in that gumbo at some point

You know what can really overpower seafood? An extremely dark roux.

I put sausage in my seafood gumbo sometimes, and I have never found that it overpowers the seafood. The flavors meld nicely together.

Just because someone somewhere created a rule that doesn't mean it's correct or shouldn't be broken.
