Your dish was super damn creative. Where did you learn the technique? I reviewed all the entries and asked myself which one would I order in a restaurant? Probably the burger (because I know what it tasted like), the meatloaf because it looked delish, and the chorizo and beans, chicken thighs, etc. I have to give it to you, your technique and creativity is untouchable, but how did it taste?

I used canned black beans. The no salt added kind. Don't recall the name of the brand.

Cooked them on low in the beer and stock until the liquid had reduced by half and thickened up. In fact, my entire dish maybe took 25 minutes to make.

Ironically, the peppermint wasabi was my favourite part, considering that I despise both peppermint and candy.

The chorizo, although not "manipulated", turned out fantastic cooking it sous vide, and I'm anxious to do it again. What was really delicious about it was the two different kinds of heat from the sausage and radish as I chewed each bite.

In hindsight I would have added a bit more salt to the stout to give it more of a caviar taste.

My submission for January: All four ingredients smothered in cheese.

Your dish really needed to be tasted IMO. There is no denying that the technique and thought that went into yours is well above the rest tho.

That was very cool and beyond my comprehension. A thing of beauty. Very sophisticated.

But I have to admit, B&T Coonhound's winning entry was also a thing of beauty.

Dang man, you take this seriously don't you? I'm no chef, just a home cook. My friends and family adore my food and watching them enjoy it is satisfying. It's all just for fun.

In the mushroom duxelle for the inside of the maki.



It's in the foreground with shallots and garlic. The Cabernet gave it the purple colour.

I voted you first because the caviar looked awesome, but I will say this: the final product didn't look particularly mouth watering. Chorizo in a sushi roll doesn't sound like the best way to serve it. That being said the stout balls looked incredible.

Spanish chorizo is not usually smoked. They use smoked paprika

For me the RIS Caviar was the single most amazing and interesting item. I would love to try that.

Second best ingredient was peppermint bacon.

I also thought a chorizo burger was a great idea.

Your mushroom transformation was good too.

For me, the cheese was a nice finish but I wasn't phased "voting wise" by the cheese.

In a tasting it might have been different.

I think I posted an experience with this from a few years ago. I went to a restaurant and as you entered the dining room, the chalkboard listed specials. The app special was "duck cells". We'd never heard of such a thing, so I asked about it. (I guess I was a little slow in figuring out their error.). Waiter starts describing mushroom duxelle. It took a LOT for the 3 of us not to burst out laughing until he was out of ear and eye shot. I didn't have the heart to tell him or the manager. I wondered if the chef had seen the board.
