I was out with friends last night and my wife and stepdaughter decided they wanted to surprise me with take-out from Five Happiness.
They got me 2 egg rolls and a container of hot and sour soup. The soup was delicious, but the egg rolls had enough grease oozing out of them to fry a couple over easy eggs.
Their egg rolls are usually not like that at all.

I’ve had incredible egg rolls and terrible egg rolls. They are really an item that you can really tell the difference in the effort put in to it.

It’s been years that I have had Chinese Kitchen but I used to like theirs

Those light Thai Spring Rolls are better

but prefer them in the smooth crispy wrapper vs. the bumpy egg roll wrapper that is always gummy on the inside.
You’re describing the difference between fried spring rolls and fried egg rolls. The wrappers of both have flour (wheat or rice, generally rice for the non fried viet style spring rolls), however the egg roll wrapper batter also includes egg. Hence the name egg roll. That’s where the bumpy, chewy crust comes from.

a good egg roll with some of that in house made hot mustard, not the crap in the packet, is golden

Kamado's on Sherwood used to do a spring roll appetizer (they called it egg roll, but dude up a few posts is right they're actually spring rolls when smooth) that had homemade hot mustard dolloped into a bowl of sweet chili dipping sauce. It was so delicious when you'd get a bit of both on the bite.

No. There is no debate.
The answer is Pho. Pho is the singular most over rated Asian dishes.
But any Asian dessert is deserving of being in that conversation. As is sake.

spring rolls
That's what they were called Trey Yuen when I used to eat there years ago. I remember my Mom and I made some using their recipe and we bought spring roll wrappers rather than the thicker egg roll wrappers. However, my favorite local Chinese restaurant calls them egg rolls even though they are in spring roll wrappers, so....

I always eat egg/spring rolls/fried wontons/shrimp toast with sweet chili sauce. I love that stuff. I add a little mustard, but I don't like it too hot with the mustard. I really like to taste the sweet chili sauce. I don't care for the sweet and sour sauce at all.

I dont know if i've ever ordered Chinese without getting eggrolls.

The best egg rolls I have ever had were from Chinese Kitchen on Carrollton. I haven't had them in years so I don't know if they are the same.

I go to a Chinese takeout on Green Springs Hwy in Homewood. We have an agreement. Because I’m allergic to shrimp, I call in at 4:45 to have egg rolls made without shrimp. 5 is too late because of their rush at dinner. Crispy and hot.
