Nope. After the 9 minutes I just shut off the gas and take the lid off and let it soak.

My dad has steamed them, then put dry seasoning and Crystal pepper on them and let them sit in an ice chest when we have a huge boil. Zero seasoning left on the outside. I prefer a 1-2 bag boil with 4-5 people and let them soak, but the steam method tastes great too.

If it works

I bring to a boil and boil for 4 minutes. Soak for 30. I do spray with a hose but if I don't not that big of a deal. I don't use salt to purge, just rinse. I use power seasoning from the shop I pick up from or Louisiana brand with some cayanne if the shop has none. Plain and simple and some of the best crawfish there is. Not rocket science. Only thing that will ruin crawfish is too much salt and too muck cooking time.

Mostly. Sometimes they put a little seasoning into the water. Also, they boil all of their vegies first, in plain water, then throw them in another ice chest with seasoning poured on top. They then sit in there getting soggy as hell while the crawfish cook. Even the professional caterers do it this dumb arse way.

Both ways work well....if you know what the frick you are doing. You can't just dump seasoning on them in an ice chest. Layer of crawfish, seasoning, a few handfuls of ice...repeat until you fill up the ice chest. Seasoning is melted by the ice and the heat from the crawfish create steam and allows the seasoning to get into the meat.

bring water to boil, boil all vegetables for 10 minutes then add crawfish, bring water back to boil, boil for 6 minutes, soak for 30. Worked at a seafood place for 2 years and boiled crawfish everyday
