I've never been served dusted crawfish anywhere I've ordered in NOLA area/BR and the two places in Lafayette I was taken to (don't recall names of those)

Tony's, Mr. Crawfish, LA Boilers are not the places I'm talking about. Those are more like seafood markets.

I've had Sammy's. Not sure on the others you mentioned.

I said "most". Not all.

It's been a few years since I tried them, but the guy at Pit-N-Peel on Government dusts. Never went back.

As long as you season the pot I guess dusting can’t hurt.
Nobody I know does dusting. They just season the pot really well so the dust is not needed.

Fezzo's, The Cajun Table, Crawfish Time, Hawk's, and honestly, probably some of the places you listed are dusting and you don't even know it.

Absolutely not, I worked at most of those places boiling crawfish when I was younger

Not the biggest crawfish eater, but even I know that you shouldn't dust. If you're that desperate for flavor, just get a salt lick and sprinkle some seasoning on it.

E.G.:
Louisiana Fish Fry 4.5lb bag
That is 1781 SERVINGS.
EACH serving is 380 mg of sodium.

They soak for a regular order but if you wanted them spicier they would dust on top
