I don't use a grinder, I use a food processor
and I also throw the heads right into the roux

I can smell it through my screen. Good job.
My grandmother lived in Norco, and would par boil a sack of crawfish, and us kids would peel the tails after clanging the fat out of the head into a clear glass bowl. Important since you could see the results of your effort dripping down the sides of the bowl. Good Times. She claimed that the liquid fat was the key.
She was a fryer for a long time and later switched to putting the heads in the oven.
By doing a large batch ( with child labor ), she would freeze batches to be used as "bait" to feed those who would come to visit her.
My favorite dish of all time. And I've got some time on me, and nothing was better. RIP MaMaw and thanks.

My mom had seven kids, five of which were ole enough to be the child labor force with me as number five. Preparing all sorts of veggies from out of the field to ready to cook is one thing I remember along with doing some field work to harvest produce and fruit. Doing bisque was an annual event that was done several times in the season.

I usually bake but thinking of rolling in flour and frying.

MD. That's for the help when she goes on break. She's pretty crafty with it but hasn't mastered the 7 band weave yet. Gibe her time she's only 8.

We have a bisque party once a season. Friday night a few couples boil two sacks, eat , peel and clean heads, drink beer.
Saturday noon, same couples get together, grind , stuff, eat, drink wine.
This gives everyone an excuse to get together, evenly distributes the labor, very large batches so enough for everyone to freeze and cook for the year, promotes the lighter side of alcoholism.
It's a working party and the type I suggest. At least when your head is about to explode Sunday morning you have something to eat.

Sounds like a hell of a good time and great reward. Unfortunately for me I have a wife that doesn't like crawfish. One of the few things she doesn't like.
