Wife's (no pics) birthday! She requested pork roast in a gravy w/ smothered green beans, homemade mac n cheese and strawberry cake. Also throwing a brisket on the smoker with rice dressing and deviled eggs! Mix in some michelobs and four roses and it'll be a good day!

I’m planning on getting some A5 Wagyu steaks. Hoping I have a new Weber Genesis by Saturday, so I figure I need to break it in with some great meat.

Probably going to have some king crab legs as well.

Use to have one, Doesn't take much air flow (vent open) to get it and maintain at 225.

Suggestion, when you wrap the brisket (if you do) pull the deflector out and add some charcoal so it doesn't burn out. If you really want to get fancy they make a fan that will maintain the desired temp for you.

that's a great suggestion and i appreciate the tip on the airflow.

i usually don't wrap, but i'm going to this weekend. i think that's the perfect time to re-up the fuel.

super excited to use this smoker and watch the game.

Lots of rain predicted for this weekend, so instead of grilling we'll probably need to cook something inside.

The high on Sunday is only 78. I'm thinking lamb chili.

Country style pork ribs and smoked sausage thrown in the oven with bbq sauce. I’m looking for easy before the game.

Thinking about smashburgers for the inlaws. They're burger fans but haven't tried smashed yet.

If not, will fire up the smoker instead.

Wasnt gonna comment until i seen this about the birria bomb. TOTAL GARBAGE , Neighbor down the road got one as a gift we tried it HARD PASS. Nothing like Birrria at ALL. Save your $$$$

I just cased up 12 lbs. of pork that I seasoned for Andouille and it is in my fridge on racks to dry out overnight to go in the smoker tomorrow morning.

I will probably use some of that with some leg quarters to make me a pot of jambalaya for Sunday.

So looking forward to college and pro ball this fall. Sports in the spring is pretty much a wasteland for me between basketball and baseball, two sports not high on my priority list.

Picked up a couple of brisket flats on sale at Albertson’s- 1 last week and 1 this week. Those and maybe some chicken breasts.

Kids want etouffee so I went to the only local place in GA that has tails - Walmart. $19/lb for LA product vs $9/lb for chink tails. Frick Chy-na

Just because there’s an LSU game doesn’t change the menu at our house. Sunday pasta and red gravy like any other Sunday in my entire existence.

The weekend of Labor Day is always a big production for our house. First Tx High School football games of the season friday night, college football all day Saturday, and the High Hill Catholic Church Fried Chicken Picnic on Sunday. And dove season opens Sunday too!

The smoker is getting fired up with a prime brisket separated into point and flat. Point for burnt ends, flat to be vacuum sealed for chili when it gets cooler. Thick pork steaks, tequila lime and garlic wings, Bellville Meat Market sausage links, some chicken breasts marinated in jalapeno juice and finished with cholula and butter, and some smoked hamburger patties round out the cook.

We are going the party/finger food route. I like that because of the variety you get. All together we will be having:

Wings (fried on the porch and sauced with assorted flavors)
Loaded potato wedges
Bacon wrapped shrimp poppers
Spinach dip
Street corn dip
Big Mac sliders
Football brownies
And at least one more dessert

i got one.

you can't put as much in it as you think. do NOT use the lower rack for brisket as it will burn.

just put the meat on the top rack and watch the temps and you're good.

this is the famous 'walmart clearance' drum smoker i talked a few people on here into buying

i was just thinking about firing mine up but got too much going on; i'll save the meat smoking for the next game.
