Cooking Competition need advice

BBQ competition coming up, typical entry's smoked chicken, ribs, etc. but a new slot called cookers choice. What would be yalls go to killer recipe for a cookers choice entry? Something light after a full day of heavy BBQ dishes? Something sweet? Need ideas

Scared of the Judeges Pallet with Salmon. Its just not for everyone ya know but i do like it

Bacon, the belly cooks pretty quick, you can cure it the week before.

Some sort of popper, with a dipping sauce. Shrimp, deer, homemade sausage, scallops, pork belly…IDK.

I’ve never tried it, but a head of cauliflower might be interesting. Baste it with herbed butter. I roasted one in the oven and it was good. The smoker should treat it well.

Our team won that once doing alligator sauce piquant. The other possible entry from our group was a fantastic etouffee, but we decided the sauce piquant would stand out in a crowd of other possible etouffees, so we entered that.

Pineapple on a smoker or grill is outstanding, to me. Maybe a dessert using smoked pineapple.

if you're a judge in a cooking competition you eat and love just about anything. don't let a particular protein hold you back.

That's too obvious, he likely wouldn't be the only team to turn something like that in. Gotta go somewhat outside the box with regard to expectations if you want to stand out.

I get all my BBQ ideas from Hogs.

Smoked Elotes

Pork Belly Bao (or any Bao.. but the buns aren't the easiest so I understand skipping this one)

Pulled Pork Egg Rolls (pickled carrot/daikon, cilantro, etc. in there). Maybe some sort of sauce drizzled on top or in dipping cup.

Smoked Mac and Cheese, preferably with a protein in it. I'm partial to smoked pulled pork, but the crawfish idea above is great too. Put the entire pan of mac and cheese into the smoker.

Smoked meat of choice, stuffed into pistolettes with pepper jack and put back into smoker or on grill for the cheese to melt

Smoked chicken salad sliders or croissants

Some sort of interesting wings, if they don't have a wing category

Pork or chicken wontons/rangoons with cream cheese also inside, and then serve with or top with a drizzle pepper jelly

Make some homemade jalapeno cheddar sausage, grill/smoke, chop cup and make tacos out of it. Melted cheese, salsa verde inside.

Someone posted ribs and grits which was interesting. Cook the ribs super tender, serve over homemade cheesy garlic grits. Don't go sweet on the sauce. Maybe Carolina?

Where is the competition? Sometimes playing into the local flavors/dishes works. There's a good chance that this competition will be judged by locals, so give them what they like.

Love the cobbler idea. You can also grill peaches and make some type of desert with it. Maybe grilled peaches with a homemade brown sugar syrup over a scoop of ice cream. Something to that effect.

Google “grilled peach dessert” and peach sundae and peach crisp comes up.

Yea I'm liking this smoked/grilled peach cobbler idea too. May grill them a touch before adding to skillet to complete. Yea a scoop of ice cream after a day of judging heavy BBQ and meat dishes may be the key
