I’ve cream would be nice but risky. Depends on how the food is served to the judges.
How long with the ice cream sit in a box with hot cobbler before being judged? Your window will be very short. I have judged a few competitions and sometimes the boxes sit for quite a bit before making it to a judge. Unless the judges are coming directly to you to be served I would not do ice cream. It will melt and make a mess unless served immediately.

Nobody wanting BBQ is thinking of a light dish. Sous vide some duck and finish on the grill with a Korean style sauce.

With a crawfish cream sauce on top. Make these often* and they go instantly.

Yea absolutely no one at these type of cook offs is wanting sous vide duck with a Korean sauce. Sorry but just not appropriate or fitting to the crowd
