Cooked my first gumbo tonight.

Just reading a-lot of your post i gave it a shot. I must say i'm not brave enough yet to create my own roux just yet.

I went with Zatarain's gumbo base. Andouille sausage is great and have never had it. Chopped my own onions, bell peppers, green onions, and tomatos.

Used fresh shrimp not Louisinaia (well in Huntsville call it fresh.) Added chicken and cooked my own rice and then added gumbo file.

Creole seasoning was a big add as well. Thanks for ideas. Family was pleased.

Cooking a Roux is one of my favorite things to do. Give it a shot next time.

Tomatoes in Gumbo.... I can go either wat.

Shrimp with chicken and sausage..... we that aint my thing. I rather seafood or chix and sausage

I will give it a shot next time. As for 2 dicks telling me to GTFO blow me. Far from troll. I want to be able to make a real cajun gumbo. And I came for extra help after doing my first gumbo.

Don't be discouraged man haha. Obviously your first attempt won't be great. Doesn't mean you should say frick it and give up

F these clowns. Nothing wrong with a couple of tomatoes in a gumbo. Helps break down the okra. I like to make the roux, and when it gets dark enough, drop all the onions, garlic, bell pepper and okra In it.

Thanks. Not discouraged at all though. Thought it was tasty. I can imagine with homeade roux and few extra tid-bits here and there.

I'm not brave enough to not do my own roux because I wouldn't know if I got the temp right

Glad everyone enjoyed it. Chicken andouille and shrimp seems like an odd combination of meats. I never mix chicken with seafood. But I'm sure it tasted fine. Just seems strange to me.

And why no okra?

Work on the roux. Have the trinity and okra chopped and ready before you make the roux. Once it is chocolate, add the veggies and sauté until translucent(the onions). Then build it with stock and seasonings. A little tomato in a seafood gumbo can add a nice color contrast...it's your call. The keys are homemade roux and a good stock.

Just starting. Didn't know if i needed to boil it or fry it. Just stuck with basics for now.

I've had it with tomato and even cooked it with tomato and I'd be willing to bet none of these swinging dicks would shove a bowl of mine away from their pie holes.
