Wife just asked me what meat are you cooking?!?!?!? I said I did not know I was responsible for cooking the meat! So feeding 15 people with leftovers? Suggestions? No ham is needed since it’s already being brought.

Beef tenderloin is the easiest large crowd cut of meat IMO. It also helps to eliminate all the rare/med rare/well discussions due to the shape of the cut. The ends will be more done and as you get closer to the middle, the less done it will be. Also, it's nearly impossible to screw up as it is very forgiving.

You can buy some turkey breasts and roast them in the oven
If you want beef and don't want to pay for Rib Roast then buy a brisket and cook it at 250 for a long time

What’s confusing,12 people, now it’s 15 people and needing leftovers. I need to spread whatever meat I am cooking. I am asking for ideas that will not break the bank and that is I nice main dish for Christmas.

Well, you could smoke 2 turkeys. Those are cheap as hell.
They also sell the boneless turkey breast that are netted and are 100% breast meat. Smoke 4 of those. Would cost you less than $40.
Can do Mississippi Pot Roast. Bring some pistolettes and that will go far.

You could do gumbo, grits & grillades, chili etc... These aren't solely meat but mostly meat and can feed an army for relatively cheap.

Thanks, I need a meat dish only. 2 years ago I did a stuffed boudin pork tenderloin rolled in a bacon jam and wrapped and baked it in a puff pastry dough, Was a big hit. Last year I did roasted pork tenderloin with a homemade pesto on top.
This past thanksgiving I did 2 turkeys and one more the day after for leftovers and gumbo. So, Turkey is out.
I was thinking pork roast or a pork loin roasted but what kind of sauce and gravy standard or something different.

prime rib but that could get pricey

Get a few 2 packs of pork tenderloins, marinate them overnight and grill them when needed. I did 2 of them the other night and they were killer with grilled asparagus and baked herb potato cubes.
