I agree. Probably the best deal in the grocery store. And, in my opinion, cold pork tenderloin from the fridge is top tier leftovers.

Yep. Thin sliced some of what was leftover from the other night and made me a sandwich with lettuce from the garden, some tomato and mayo. I was is hog heaven.

Yep....absolutely best deal. Can cook it in oven for hour 1/2 and I can eat for 3-4 meals. They have been 99cents a lb for the last couple weeks at Kroger and I have done two of them. Slice it real thin, make some slaw and put it on it, splash of hot sauce and it eat it just like that

The recipe below is quite good. You can double or triple or whatever.
I don't understand how many folks you're cooking for. Is it 15 people for the initial meal, but you need to have some leftovers and, if so, for how many folks? It's very confusing.
1 ¾- 2 lbs of pork tenderloin
For the glaze:* We find you need a little extra glaze, so we make more of this than the recipe calls for.
4 cloves garlic, finely chopped
1 Tablespoon chopped fresh rosemary
½ cup balsamic vinegar
3 Tablespoons honey
2 Tablespoons Dijon mustard
Salt and freshly ground pepper to taste
Preheat oven to 350.
Combine all ingredients for glaze. Pour it over the pork
Marinade the pork in the glaze for at least an hour or so.
Place pork and all of the glaze in uncovered pan and bake at 350 for 20-30 minutes until pork is just done. Serve sliced and spoon glaze and pan juices over the pork.

I did pork tenderloins, simply because they’re easy as hell and zero waste. Costco sells a double pack with two per section. You can easily roast 6 or 8 at once in the oven, on sheet pans. 450 for 20-25 mins depending on how cold the tenderloins were at the start. Pat dry, rub with oil, use your favorite BBQ style rub. Pull, rest, slice, done.
Brisket is good for a crowd, too. Pile a bunch of sliced onions in a pan, cover a flat cut brisket w more sliced onions. Roast un covered at 450 for 1/2 hour, then pour over a little honey, balsamic, and some beef broth. Seal tightly with foil and tint the oven down to 325. Cook for 4 hrs or until a fork slides in easily. Can put two flats into the same big roasting pan if you only find small pieces.

Meat is solved! Doing a pork Bracciole. I picked up a pork loin at Costco for $14. I will cut and pound individual servings. Roll & Stuff with garlic, parsley, breadcrumbs and olive oil smothered in tomato gravy.
