Choice whole brisket at Rouses

Got the paper this morning and Rouses is selling choice whole briskets for $1.99 lb.

Just a heads up for anyone interested. I'm getting one tomorrow to smoke on Saturday.

I seen $2.99.... that's about their normal price. When the get $2 a pound I buy 2. Smoke 1 and grind one for chili.

Picked one up for 1.99 this afternoon gonna turn it into ground meat. got home late so stuck it in the fridge.

Do these have high fat ratios or would I need the butcher to trim some fat off before grinding the brisket? I had one ground up several years ago and I believe it had a good amount of fat on it.

My local Rouses paper has it at $2.99, I have one in the freezer, but if it was $1.99 I'd buy another (or two).

Same at Kroger for those near Kroger and not Rouses.

You're going to go through the process of grinding yourself but going to have someone else do the trimming?

Get a knife in there and trim it like you want

Thanks for the heads up. Sorry for the dumb question.... I need a brisket for next weekend. If I grabbed one today, and threw it on the smoker next Friday (4/29) you think I’d be good?

Google says 5 days so just curious. I always air on the side of caution but feel like I’m overthinking this.

ETA: I don’t want to freeze it ideally so talking fridge storage

It'll still be fine by next weekend if you bought it today.

Those sales usually last a week or so, so you could always just wait until Sunday to buy one if you're really concerned about it.

Does anyone else find Rouses meat to spoil closer to the sell by date than other grocers? And sometimes before the date? I’ve had bad luck with their meats. I talked to a friend who used to be high up in the family. He says the Rouse’s do some pretty unethical things to make a buck.

Yes which is why I am debating whether or not to risk it on the low price Choice brisket from Rouses or trek to Costco to buy a prime for this weekend

So your friend was a Rouse? How exactly was he high up in the family? Can you share specifics of the “unethical things” they did?

Their sales run Wednesday-Wednesday so they should still be available next week.

i have never had an issue with fresh meat at Rouses. Just lucky I guess. Win dixie however Rouses sales run through the following Wednesday if that helps

Picked one up this morning. $24 for a 12 lb angus choice. For the person asking, it should stay good in the cryovac for about two weeks.

Rouses will grind the brisket if you ask them to do it. I would not be making ground meat myself.

I enjoy doing it my self and I control it. just stripped the brisket for the grinder gona chill it over night it chopps better that way 19 lb brisket and I took 8 lbs of trimmings off. Not sure yet but will prolly render it down to tallow tomorrow while grinding

Got 2 this afternoon and ground some burgers for the next couple nights out of the flat. Seasoned the point to smoke tomorrow.
