Cheese Enchiladas topped with chile con carne, cheese, and onions

This has always been the dish by which I judge a Tex-Mex sort of restaurant. It’s become, however, increasingly hard to find in Louisiana.
Superior made a passable version, but you often had to ask for the diced onions (even though it was mentioned on the menu) and even then it was about 50/50 you’d get them. Last time I went, the whole dish was poofed from the menu.
I note this “Tex-Mex fusion” place in BR doesn’t seem to have them. Few if any places in the NOLA area do anymore.
I only know El Rio Grande in BR now.
Where can I find this without having to go to Texas? Every place there still seems to do it. Why can’t I find it anymore here hardly?

The trendy new ‘modern’ places in Texas miss this as well, or try to trick it up. I blame the Californians.
Thankfully we still have a good supply of hole in the wall Tex Mex joints.

I get this (and I don’t necessarily expect all “Mexican” places to have it), but it seems like any place that is known to be “Tex-Mex” will still have it.

La Fiesta on the wank makes a great cheese enchilada with the onion. Been a minute since I’ve been.

If there's an El Chico still around anywhere, my standard order was one beef enchilada and one cheese and onion. They topped it with their chili. I added a dollop of sour cream. It was a good meal.

In Austin proper, El Patio is pretty accurate for traditional Tex Mex.
I still like El Arroyo though others say it’s not the same anymore.

What part of town?
El Patio, as already mentioned, is a classic old school spot. Near UT campus. Matt’s El Rancho further south is another that doesn’t try to get too fancy. Lots of others esp on the east side of 35…Cisco’s, Joe’s bakery.

Texas Chili parlor does a pretty good Cheese Enchiladas. I make it a point to stop by there every trip to Austin. Also get a Mad Dog Margarita and pretend to be Guy Clarke
