Burger recipe: anything different?

1# ground brisket, fat cap and all.
Combine brisket with 1 tsp. Kosher salt, and 1/2 tsp. freshly ground pepper.

Form 3 patties , preheat grill to Med/High.
Grill burgers for 3-4 minutes, then flip and continue grilling until desired internal temperature.
Grill sourdough hamburger buns (optional), top burger with caramelized / grilled onions, pepper bacon, cheese, lettuce, tomato, jalapeno mayo, etc..

Acadiana style:

Sear them on both sides, put into a slow cooker with a bottle of jack miller's on low for an hour or two. Load up on a bun or some Evangeline Maid bread. Crack a cold beer.

Not gourmet, but it ain't bad either.

I've been enjoying the "smashed" method recently - basically, get a ball of seasoned ground chuck, smash it down right after putting it on the skillet/griddle to maximize the crust, then flip and top with American cheese. Tastes like a good diner burger.

I wanted a burger the other day and all we had was ground turkey
no idea why my wife buys that shite but I mixed in a half basket of finely chopped mushrooms and I'll be damned if it wasn't a good burger

I like to mix an equal part of bison with an 80/20 beef chuck.

I like to roast some chiles (poblano or anaheim), peel, slice for a topping. Sliced avocado, as well.

My wife and I rented "The Founder" last night and watched it again today. So we're going to McDonalds tonight. She's going to have her first Big Mac and I'm getting a couple of their regular burgers.

I recommend the movie - very interesting. The Big Mac and Ronald McDonald were never mentioned.

For a while I made patties with a healthy dose of ranch dressing and hot sauce. (Not buffalo sauce, plain ole LA hotsauce). Came out really good with cheese and grilled buns.

I only use salt and pepper now

Chopped spinach and feta mixed with the meat. That's the go to at our house. Here's one I did on a toasted, homemade buns with extra feta, avocado and bacon.

I add chopped grilled onions to the recipe then throw them on the smoker

I don't care what you put in/on them... just be sure to make a small depression in the center of the meat.
Helps the burger not turn into a hockey puck.
