Boudin Doesn’t Belong in King Cake

Boudin is made to be enjoyed at a boucherie or from a white paper wrapper on the hood of your truck.

It is not made to be grilled or put in gumbo or kolaches or — for God’s fricking sakes — king cake.

If you don’t agree, name your Sonic.

The fact that boudin goes great in a “king cake” or a kolache is part of what makes boudin great.

A boudin king cake is not a “king cake”, but they are good and I have no issue with them. Same with the donut “king cakes”.

They are taking some liberties with the term “King Cake” to mean pastry formed into an oval shape. It’s basically a oval kolache.

I disagree, partially. Now, when I think of King Cake, I think of dry arse overly sugared crap. And because I’m a worthless piece of trash I actually like cream cheese and fruit, or creme brûlée, or other sorts of wet filling to combat the dryness of a king cake.

Now you can take NOT king cake dough, stuff it with meat and cheese, red sauce, white sauce, boudin, (sans casing), etoufee, whatever. And you can roll it and bend it into that shape that looks like your mom’s vagina, and bake it with butter and cheese and an egg wash and purple and green onions, and it LOOKS sort of like a king cake, and it is delicious…but is it a King Cake?

No. It’s better. An Emperor Roll.
