Keep it simple for your first boil.

Onions, garlic, lemons, and other fixings.
A jar or bag of powder boil. You could add some liquid if you choose.
Put it all in a pot and get it boiling. Drop the crawfish and let it come back to a boil. Cut the heat and let it soak until sink and you can check them for pealability/flavor.

There are variations with this that I do but I think this is a simple way to know you at least didn’t frick it up and have good flavor.

Make sure you wash with water fully before as well.

Check out the above poster...how much crawfish, how big is pot. Remember, you are seasoning water not crawfish.

Here's my recipe. It's really good but I may try chackbay here soon.

For one sack:

1 large container of zatarains proboil

1 14oz package of regular zatarains

1 8oz bottle of concentrate (regular)

4 zatarains spice bags

I cup of celery seed (just tried that the other day and it was a good addition)

A sack of lemons

Use whatever sides you like.

My method is close to that of Pandy: I use 1 bottle of regular Zatarains, about 1/2 dozen lemons, a cup of celery salt, and the ingredient that you really need is about a cup of powdered Chinese red pepper. I use this for one sack of crawfish, 3 lbs. of sausage, and a bag of potatoes. At the end, I put in 12-16 pieces of frozen corn to cool it all down. You will love it. And use 6 gallons of water or just enough to barely cover the crawfish.

1 bag of LA
1 bag of chackbay (if in Louisiana, check Rouses)
1 8 oz liquid or grab the 16 oz and dump a lil more than half
8 onions cut in half
10-12 garlic cut in half
2 celery stalks
I do lemon juice versus lemons.. i use the whole bottle

cook onions, potatoes, and garlic in the crawfish sack 7-10 minutes prior to doing crawfish... check potatoes with a fork or knife.

Pull the bag out, dump crawfish in basket and lower in pot

when it comes back to boil, go 2-3 minutes then cut the fire and stir the crawfish and spray the outside of pot with hose water for a minute or so.. dump your pot, onion, and garlic back in along with sausage and corn and mushrooms and greens if you choose to do so.

The secret to a good crawfish boil is using good peanut butter. None of that cheap great value or Peter Pan garbage. Moms like you choose JIFF for a reason. Also make sure you have the jumbo marshmallows to throw in the last 5 minutes of soaking. The miniatures don’t hold up well.
