Best Squirrel Recipe?

I haven’t hunted squirrels in ages and am looking to get back in to it. What are some of your favorite recipes for them? Thanks

Squirrel sashimi. Slice the backstrap paper thin on a 45* angle (you want it translucent) and spread it out on a plate. Drizzle with some good soy sauce and ponzu if you have it. Maybe a little lemon rind.

Delicious.

Cut into 5-6 pieces, split down middle, shoulders and back legs, season and dust with flour, brown, throw in the trinity, add water/stock and simmer. I typically will add some fresh or smoked sausage in with it. Serve over rice.

I salt and pepper them, flour them up and fry them till half done. I’ll have a big gravy going, take them out of grease, cook them rest of the way in gravy.

Parboil cut up squirrels with an onion for 45 minutes to an hour on a low simmer...until tender. Run through an egg wash, then seasoned flour and deep fry until golden.

Pour off most of your oil, make a brown roux,use the stock to build a gravy and then smother the squirrels for @ 30 minutes.

Serve with rice, biscuits, etc.

Quarter the squirrels (idk why they call it quarter when you end up with 5 pieces) and put in a glass dish with butter and Cajun seasoning of choice. Cover and bake at 275 until tender. Either eat as is or coat with wing sauce.

This one from Acadiana Table is similar to what I do, and I use the optional can of diced tomatoes.

I’ve heard of people eating Squirrel Head Sauce Piquant.
You crack the head open with a nut cracker and pick out the brain.
Not my thing, but for those that like it, enjoy.

My dad had my mom over to his apt in college for their first date and his roomate made squirrel spaghetti. His roomate also fried squirrel brains, not that night though luckily didn’t get too rednecky.

I don’t know how they ground the squirrel fwiw. My mom is from Chicago so I don’t know why she fell for it but here I am.

Stew was the only way I could handle them and my dad, a competent cook, did all sorts of things with squirrel.

Brown and then add to a standard stew still on the bone, and pull out bones after everything is fully cooked. There’s a good simple recipe out there somewhere.

Squirrel hunting is one of those things that evokes certain, specific memories. Namely freezing my arse off.

I made a squirrel sauce piquant this weekend. Turned out great. Squirrel is excellent table fare if you know how to cook

Why do you guys not like squirrel? Its not like White tail is the amazing table fare either.

Squirrel is good in a stew, fried, or with a gravy as said. I get not seeing the appeal of eating a tree rat or not wanting to do it, I've never understood hating guys that do. Its not much different than rabbit.

Never said I hated guys that do, rabbit is much better eating (are you really comparing squirrel to rabbit? other than them both having 4 legs), White tail... like I said I eat what I kil , so I dont kill a bunch of them, enjoy the bcakstraps and tenderloins grilled or fried, the rest gets ground for hamburger meat or sausage

I have eaten my share of squirrel , just dont care for them
