I really like Junior's and use it in my jambalaya, I don't think he smokes it as long as Mr. Porche did his though and I can taste the difference when I make a gumbo. Now when it comes to steaks I only buy from Junior.

I got to try Teets for the first time a couple of months back and it lived up to the hype. Simply the best.
That said, Rabideaux's ain't for behind. It too is a fantastic smoked sausage. I wouldn't classify it as a mass-produced brand but the Rouses on Bertrand in Laffy sells it. Can't remember the name but they also had a local Ville Platte brand in store.

What's the secret to Smoked sausage in Louisiana? In NC, we have crap sausage--mainly store brands but even the "fancy" brands don't compare to Savoie's, much less a great sausage like Rabideaux's or even a grocery store sausage like Market Basket in Lake Charles. Better ingredients? Smoked longer?

Probably out of the op's area, but Bourgeois's smoked sausage in Thibodaux / Schriever is really good and one I use regularly. I call ahead and they will cut up a butt and sausage when I am cooking a jambalaya. I really like all of their products - beef jerky, boudin, great burgers, etc...

I don't know who makes the Alexander's branded sausage at the store on highland and perkins but it is damn good. Usually get the venison if I have exhausted the supply in my freezer, but the pork is good as well.

Mother of all bumps.
Population heritage and slave influences.
Louisiana has a very large French population, but there are a lot of Germans floating around too. The slaves (more free people of color than anywhere else way back) gave us the spices.
French knowledge of cooking, German techniques, African spices.

A new place in back Vacherie called La Bon Boucon has some great smoked sausage as well. I've been very impressed with everything I've bought there.

Word. People don’t realize it, mostly because they haven’t tried it, but Peto’s at the Roanoke Exit is awesome smoked sausage.
Also, Rita’s in Gott’s Cove (on LA 98 between Iota and Basile) is pretty damn good as well. Beef jerky as well.

I usually go with Veron's (out of Lutcher/Grammercy), although there are probably some equal or better options.
My dad was worked with a family member of theirs when they were starting in the 80's, so he'd come home with all kinds of meat samples--hog head cheese, etc. Good times.
His friend would also occasionally give him a couple of bags of a new, local potato chip they were just starting to make down there--my first encounter with jalapeno Zapp's.

Got some Teets. It's good. But it's underseasoned. Great smoke and texture, but they need to add a little more of their seasoning blend.
I prefer the deer sausage at bourque's and the standard sausage at riverside in plaquemine.
