I'm not going to get into an argument about which one is better between Tennessee (Memphis), North Carolina, Missouri (Kansas City), and Texas. Everyone has their own preference and I think everyone will agree that these four are considered the "first tier" of BBQ. So, in your opinion, what's the best second tier states for BBQ?

Arkansas has been known to do some great things. I've found that Mississippi natives love their syrupy sweet bbq. Alabama has the whole white bbq thing going on and South Carolina is known for their mustard sauce bbq (the state is actually more split than you think - a lot love vinegar and pepper too). I'm sure Georgia and Kentucky can do some great things. Unfortunately, I have always found Louisiana bbq to be....forgettable.

So, in your opinion, what are the best second tier bbq states?

north mississippi from what I hear, but you could just lump that in with the greater Memphis area. Outside of that area, Tennessee is forgettable as well.

Louisiana is a pretty good mix of Memphis style and Texas style I find. But I guess do to priorities in cajun cooking there are not a lot of BBQ restaurants in general compared to other bbq states. All the decent bbq is found cooked in the backyards. And even then for some the priority is on making a good jambalaya for big events or a gumbo. BBQ in the south has always been about feeding a lot of people cheaply. In Louisiana we just have many other ways to do that so BBQ isnt king.

I haven't had BBQ in enough states to know but why is the BBQ in Louisiana below the rest of its surrounding states. Especially since we seem to love our food here as much as anywhere.

California?

supposedly there are a lot of really great BBQ joints in South Compton and the other very poor, seedy areas of Los Angeles.

I would imagine they do it well up in the sticks of northern California as well.

I would imagine so

The thing with the Los Angeles area is that if you can think of it they're probably going to have a really good version of it somewhere

The only time I had BBQ when I was there was at catered events for work. I don't remember the name of the place they used for the events but it was definitely solid.

If we're talking about smoked meats , the smoked meats festival in VP had some of the best food I've ever had. Not sure if that's what you mean by BBQ

Western Kentucky Style BBQ is pretty solid, where mutton and pork shoulder are the meats of choice.

quote:

The Ohio River region of western Kentucky, namely Daviess, Henderson and Union counties (the area centering on Owensboro and Henderson) has developed a unique style of pit barbecue, featuring a heavy dose of vinegar-based sauces, often served with pickles, onions, potato salad and coleslaw. The three main meats used are chicken, pork and mutton, but beef is not unheard of. Burgoo is a main specialty, with no two burgoo recipes being the same. Owensboro is home to the International Bar-B-Q Festival, which is a sanctioned barbecue competition.
Farther to the west, in the Purchase area, pit barbecue is primarily pork shoulder, with the unmodified word "barbecue" referring specifically to that meat. The other meats used in the Owensboro–Henderson area are generally available as well. Sauces are essentially identical in the two regions.

I would think any state south of the Mason-Dixon, save maybe FL and LA is close to or in the 2nd tier.

Arkansas is probably top of the 2nd tier. My Q experience there is limited but in the plus column especially pork ribs and I know they take their pork Q seriously.

The Central Coast area of California is known for its BBQ. Some of y'all may have heard of "Santa Maria Style BBQ" where there claim to fame is Tri-tip.

I would say Alabama is up for consideration, even though I am obviously biased. I wouldn't recommend Bama for having any type of unique style of BBQ. However, as a state as a whole, we have a solid number of places that do different styles pretty damn well. For that, I would consider us second tier.

I'm not much for teriyaki usually, but Hawaiian style BBQ is delicious. Lived there for 3 years while in the Military and really miss going to my local friends' family BBQ's. Oh so "ono" (delicious).

I would never consider it to be nearly in the same league as the major BBQ States, but I definitely feel it deserves recognition as a second tier BBQ state.

Tri tip is statewide and great but you find all of it all over the state including ribs, chicken, brisket and tons of Mexican BBQ.

It's as diverse as any state and I'd put it up there with the best. Easily.

There's nothing like a Utah BBQ washed down with near beer. The strip clubs in Salt Lake City are also second to none.

North Alabama has some really good BBQ. I cannot imagine anywhere being better than Big Bob Gibson's and Whitts. Whitts

In Mississippi you get good BBQ Hattiesburg north. South of that it is kinda weak.
