Best kitchen knives?

Looking for a new set of good, sharp kitchen knives for food prep. Any suggestions? What are the top brands / types?

For everyday use, get a few Victorinox Fibrox knives. A chef's, boning, and paring knife for starters, then branch out.

What is your skill level?

If you're a typical home cook, get some good German steel. If you're to the point where you know the difference between a brown and white stock, and what each is used for, get a quality Japanese steel knife. Santoku being the most verstile, closely followed by a Gyotu.

Victronix is a good one, but you should check out the Global Cutlery line, made in Japan. Great prices and very sharp.

People will say this at some point but you don't need a set. Get a good Chef's knife, get some good steak knives, get a pairing knife, and maybe a cheap bread knife. That will get you through 90% of tasks

Edit: Shun is good, Global is good, Wusthof is good. First 2 Japanese and last is German. Those are some of the good brands

I started with a 7 piece set of Wustof Classics. Love them, but as others have said I don’t use much of the set. Added 2 Santukos and recently got a high end Shun chef’s knife which I prefer over the wustof.

I just got my in-laws this set for Christmas. I’d get something like this and buy a cheap bread knife.

I've had my 8" Bob Kramer by Zwilling carbon steel chef kife for about 5 or so years now. In that time, I've had to sharpen it twice. You have to baby it a little because of the carbon steel and make sure you wash and dry it thoroughly immediately after use, but that's not a big deal and it will develop a nice patina rather quickly. I love this knife and use it for probably 75% of the cutting/chopping I do. I would recommend spending the money on a good 8" knife and then branching out from there.

He asked for good brands and those are 3 of the go to. If you look at chef knife articles they discuss German and Japanese knives. I wish we made incredible American chef knives

This. I bought some very nice knives years ago and read an article where Donald Link used Victorinox and would just buy a new one every couple years. I bought one and use it more than anything.

So, you're saying get a set?

I love my Calphalon self sharpening set. I use everything but the tomato knife.

Nah buy them individually. The steak knives you can't do so but I the 15 knife sets have 10 knives you may never use
