Chicken Parmigiana at Vincent’s in NOLA not the fake one in metry. Ask them to make a diablo red gravy for it.

Marjie's coal grilled 1/2 chicken is really good.

Cause it's fancy, bro.
They don't actually serve it like that. They present it to you table side, then take it back to carve and finish the cook on the dark meat, which is served separately in a ramekin. Gotta provide some theater when you're charging like $90 bucks for a chicken lol.
It's worth it, though. Very memorable dish that tastes even better than it looks.
