Call Rabideaux's. That's the best I've had. Teet's isn't as good as it used to be.

I agree. As far as regular smoked sausage to put into stuff like beans, gumbo and whatnot, it's awesome.

I love Opa sausage but not the type of sausage I would put in red beans.

I really enjoy Kartchner's smoked pork sausage and the smoked green onion sausage. I also keep their smoked hocks in the freezer. They're terrific for flavoring beans and the like. I highly recommend the hocks if you're going to order for beans, in particular, along with the two sausage types. The folks there are also very nice and easy to deal with.

I'm not as big a fan of Rabideaux's as a lot of folks. I find the smoked flavor to be weak for my taste.

But I question if we're even talking the same Rabideaux's - Exit 44 off I-10, Iowa, LA just across into Calcasieu Parish?

I've bought their smoked tasso, andouille, and sausage numerous times over the past seven years and it's always had the most robust, well-smoked flavor.

If someone wanted to criticize it, it wouldn't be the lack of smoked flavor. It's every bit on par (and more so IMO) with Kartchners.

Vine's is the only buffet I will eat at for the last 15 years, but I only get it once or twice a year when in Woodville to hunt.

One and the same. They sell their sausage at Sam's or they used to. I haven't looked for it in a good while. I've bought it on multiple occasions. It's not my preference over other smoked sausage. That doesn't mean it's not good.

Teets now has a slightly newspaper smoke taste that is just awful.

If you haven't gotten sausage from riverside in plaquemine, you're missing out. For flavored sausage, big O's fresh cane syrup jalapeno sausage is the best in louisiana. Fresh. Not smoked.

It has the most smoke flavor of any sausage mentioned in this thread, by a long shot. Maybe you need to retry it Gris.
