Beef Tallow

Buddy butchered a steer and wasn’t going to do anything with the kidney fat so he let me have it. Cut up 2 lbs. tonight and cooked it down. Probably do the rest tomorrow. Anyone on here like cooking with it?





Has a nice gold color when finished.

That’s a jar of liquid gold. I’d use it for any fat if I had access to it.

You ever make a roux with it? Probably be good in a gumbo.

Seer steaks with it. Can handle high heat and adds a bit extra beefiness too them. Also good as the oil for your scrambled eggs.


My best use for it? Giving my dogs their pills. They don’t give a shite what’s they are eating when it’s covered in this glory.

I mainly use it for pie crusts and biscuits. Also makes excellent French fries. Fried up the trimmings in a separate pan for a little snack.

When it comes to roux I think fat and flour is fat and flour. I’d give anyone $1 to their $2 that they could not distinguish a gumbo made with a scratch roux from a jar roux all other things constant.

I’m not trying to be dismissive. Just saying I wouldn’t waste that in a roux.

Yea, smoke point is probably the most important characteristic.

That stuff is great to baste a brisket with while its on the smoker.

Not sure about taste per se, but the tallow is much more healthy for you than some crappy vegetable oil.

I use it for everything, cooking, frying, and put it on cast iron.

It’s weird how the fat around the kidneys is different than muscle fat. This fat will crumble into little pieces when you roll it between your fingers. Also has a different melting point.

beef kidney fat is the same as leaf lard from a pig. Premium stuff

This is what McDonald’s used when I was a kid. Great stuff. I will sometimes save tallow from ground beef if I’m cooking a lot. I add it to boiling water and when it cools you can peel it off the water and leave most unwanted bits behind.

Yep I use it from beef pig and chicken. When I can I’ll use the tallow of what protein I’m cooking with, beef tallow for meatball stew. I want to make a c&s gumbo and use the chicken tallow to make route roux.

I was wondering the best way to strain it. I’d love to hang on to the beef fat that accumulates in the cast iron when we cook ground beef.

Rendered down some ribeye fat last weekend that I didn’t need for my ground venison. Got a quart of gold stashed away.

Make some curry with it and serve it to some Indians. Record their reaction when you tell them what was in it.
