“Beef for Fajitas”

When I buy a pack of meat labeled “beef for fajitas” at the grocery, what cut of meat am I actually buying? I feel like I’m paying a ton for them to slice it. Is this accurate?

If it's the pre-cut and pre-seasoned pack from the Walmart/Albertsons/etc. it's likely sirloin.

The label should say somewhere. At my Publix, their label "Beef for Fajitas" and also sometimes labeled "Beef for Stirfry" is not skirt steak, it was chuck or round or some other low grade "stew" meat. I had to tenderize it with a rubber mallet to make it palatable.

Edit- I found my thread. It's top round if you got it at Publix. Some tenderization tips here too-

It’s from Acquistapace and I couldn’t find anything on the packaging.
At $9.29 a pound, I’ll cut it myself.

typically skirt steak.

A good friend of mine started me on this - when rib eye's go on sale for cheaper that skirt steak, buy some thinly sliced and use them as fajita meat. Even if they are "cheap" rib eyes, they are still much better then skirt.

If it is cut up its left over and could be parts of several cuts of beef. If it is whole there should be another label such as skirt or similar.

A few years back I started using flat iron steak and it is a game changer for fajitas. The problem is only a few stores carry this cut so when I find it I buy several and freeze them.

Go to the hispanic grocery store wherever you live and see if they have pre seasoned fajita meat there

Outside skirt is what you get in good restaurant fajitas and it's hard to find in stores.

I've never seen outside skirt locally - order from Honestly Beef or Wild Fork. Calandros might be able to get it.

pretty much impossible to find in stores you have to order online.

sirloin flap is a better alternative than inner skirt imo.

No need to break the bank for fajita meat... Just get the cheap beef and marinate it in lime juice and spices for a couple of hours... But no more than a couple of hours..

For steak tacos and fajitas, this is true.

Winn Dixie will at times sell their select cut, cheap ribeyes and new York strips for about 5 to 6 bucks a pound and they're great for that. Much better than skirt or flank steak.

The Mexican store on Florida Blvd in Baton Rouge is the place for this. And cheap compared to anywhere else in town. One of the few places I’ve found shrimp bullion cubes locally as well, great addition to
Seafood stocks.

There's a place in Morgan City behind the Rouses that has some awesome marinated fajita meat. That's where I get mine.
