Medium grain is and will always be the right rice.
I’m cajun, I know more than you.

Basmati is both more flavorful and has a far better texture.

I used Uncle Ben's because it was a strong parboiled rice that could firmly withstand the weight and texture of the bean mass.

Now that they have removed Uncle Ben from the box (we can't show an image of a black chef because racism!!!) I am conflicted. I might have to experiment with some of the weaker rice grains.

Y’all tried the popcorn rice they sell once a year by the ag center as a booster for the horticulture students….

They sell rice and sweet potatoes each year!!!

My BIL from Abbeville (Meaux), who’s family was in the rice farming business always said the same thing… until I finally got him to try jasmine rice. I’m not saying he’s a full convert, but he admitted it was better.

Basmati/Jasmine and related floral rice varieties are exceptional. I still use medium grain occasionally.

I've started boiling it after I put the rice in until water jumps up over the rim of the pot and then turn the heat down to low and that gives you really sticky rice.

That’s the bio engineering dept. It’s their annual fundraiser. When I ran it the rice and potatoes were fantastic.

I’m not going to say it’s better but red beans over dirty rice is quite tasty.
