Probably won't fit into your diet plan, but a crisped slice of prosciutto on that would be grand. The saltiness and flavor of just one paper thin slice crisped in the oven is mighty good. I had some on an egg benedict last night. You could get a lean ham sliced really thin and do the same thing. Not as good, but not bad either.

J. Henry's , local craft bar in Clear Lake, serves a bacon/avocado grilled cheese.
Crispy bacon, pepperjack, avocado on Texas toast w/ thick cut steak fries. It is my favorite sandwich in the whole, wide world.

Do what you said except put that in a tortilla and add some verde salsa, habanero or other hot sauce, sautéed veggies, perhaps some bacon, and make you a bomb arse breakfast taco.

I wouldn't order it at a restaurant, but I love avocado toast with a runny egg on top.

S&P each component before assembly, to ensure thorough seasoning throughout.
If you just put it together and S&P after its assembled, the tomato will be over salted and the egg and avocado will be under seasoned

I get what you're going for, but if they all have as much as what is on the tomato, I'd consider that too much.

Not breakfast, but the avocado toast with fish from Shaya’s is amazing. Hopefully his new shop will have something similar.

Had avocado toast this morning. Toasted Ezekiel bread topped with mashed avocado, everything bagel seasoning and a fried egg. Damn it was delicious!!

You need a bread upgrade from the Sara Lee. Get thee to a local bakery and buy some decent sourdough or pain au levain. Have it sliced, then wrap & put in the freezer. Voila--excellent bread, a slice at a time, when you need it for avocado toast. Rub bread w/EVOO, and brown it in a skillet rather than toasting w/toaster or oven. It will get crunchier on outside while remaining tender inside. Bonus points if you rub it with a cut clove of garlic pre-toasting.
Another upgrade is to slather a layer of quality full fat ricotta cheese on the bread before adding the avocado. Crisp bacon between the avo and the egg is good, too.

I had to go fry some bacon and eggs after reading all that.
If I'm going to eat an avocado, it's either in guacamole or sliced by itself with salsa and red pepper. I do the latter often along with a couple eggs for breakfast.
