Avocado Toast - breakfast doesn't get any better than this

I am addicted to this.

Sara Lee Delightful whole wheat toast

One avocado w/ salt and pepper

Fried egg white with salt and pepper

Vine ripe tomato with salt and pepper

Anyone got any more recipes for this?

I do the same but substitute avacado for bacon and cheese cuz I’m a man.

Ha--I had avocado on a toasted sourdough English muffin w/coarse sea salt, cracked pepper, a big squeeze of fresh lime, and a soft fried egg on top for breakfast this morning. (No ripe tomatoes yet.)

You need a bread upgrade from the Sara Lee. Get thee to a local bakery and buy some decent sourdough or pain au levain. Have it sliced, then wrap & put in the freezer. Voila--excellent bread, a slice at a time, when you need it for avocado toast. Rub bread w/EVOO, and brown it in a skillet rather than toasting w/toaster or oven. It will get crunchier on outside while remaining tender inside. Bonus points if you rub it with a cut clove of garlic pre-toasting.

Another upgrade is to slather a layer of quality full fat ricotta cheese on the bread before adding the avocado. Crisp bacon between the avo and the egg is good, too.

Yes, it's Cali white girl food but its damn tasty.

Add bacon to my avocado toast above, it works very well.

I also make a "BEAT" sandwich. That's bacon, egg, avocado, & tomato sandwich.

I'm addicted to avocados.

He posted the Delightful, which is 45-calories so I imagine that's the reason

OP - lemon juice and red pepper flakes are awesome on avocado.

I'm a fan of cherry tomatoes and a drizzle of olive oil on mine, but other than that this is pretty much the best hipster-but-still-tastes-awesome breakfast ever.

I've always done it with just straight avocado with salt and pepper on toast and that's tasty already.

But now you've piqued my interest in upping my avocado toast game.

I guess I'll never be able to afford my own house.

This sandwich could be elevated 10 fold, but I'm keeping it healthy, hence the lack of bacon I use to add to it and egg white instead of entire egg.

As for the pepper, it is fresh ground black pepper, so there is pepper oil there. I will try the lemon juice.

But an honest, artisanal whole wheat sourdough loaf won't cost you more than 45 calories a slice, because it's not full of corn syrup or fillers, and you can slice it as thin as you'd like.
