I actually have no idea where he's from. He may not even be "a cajun"
But there have been some good discussions on here in the past regarding the bayou style of cooking versus prairie. I love Mosquito Supper Club, but the recipes are very different from what I'm accustomed to in my own cooking. A lot less roux usage. She even makes gumbo without it.
Although, I feel like I've been told before that the prominent and super heavy use of roux we see a lot today is not the way the older folks did it even in the prairie areas. That it is more chef-y and adopted more by younger generations. The way Cajun Ninja cooks is identical to how I like my Louisiana staples.

He is originally from Houma, resides in Thibodaux now. My wife and his sister have been best friends forever. He has busted his tail to get to this point in his life and deserved his recognition. He makes simple delicious meals that cater to the everyday home cook. He is not trying to be a fancy restaurant quality, or some chef level details. It's more about "how maw maw used to make it".

Usually we would just call Vandebilt kids drug addicts and keep it moving, this is just weird.

His recipes are great and I’ve had a lot of success with them.
My only issue is he tends to sauté too long. I just cut back the time and it works perfect

Disagree. These people who say "get the trinity translucent, 3-5 minutes" are complete liars. His 30-40 minutes is spot on.
