I do make a killer dish that isn't an everyday thing...the best thing I've ever made.

Tuna belly, thinly sliced
Vinaigrette of blood orange juice, rice wine vinegar, light and dark sesame oils
Bruinose of peppers

Similarly...

Jumbo lump crab
Lime basil vinaigrette
Microgreens
Served over a flower made from heirloom carrots, radishes, and turnips

I think that I am a good cook. About a year before moving out I bothered the hell out of my mom to teach me how to cook, of which she did. Learned how to make a good south Louisiana roux and use the trinity. Many a mean chicken stew have come from my kitchen.

Learned from my dad, my families Mexican food place, experimenting over the years, and my roommate who is a creole chef.

My best are chicken fijita enchiladas, chili, BBQ sauce and everything it goes on.

Yes for most things; my mom and dad taught me and I supplemented that with internet recipes. I guess my best dish is my red beans. My uncle's beans are fantastic but he won't teach me- "it's a secret."

A bunch of my friends are self titled "great cooks" and their food is awful. Putting Tony's on something doesn't make you a good cook, people.

I like to think so. I'm the main cook for our family. Probably cook 90% of our dinner meals. Wifes specialty is breakfast and soups.

Dad taught me some and self taught the rest.
