This is EXACTLY how I feel. My mom cooked dinner every single night growing up, and I appreciate that because I'm not fat.
But she takes shortcuts that I 100% do not approve of. She sometimes buys jarred roux...NOT OKAY.
She uses lots of jambalaya mixes and whatnot. She KNOWS how to make her own and executes it quite well when she does so, but she uses mixes when it's a normal weeknight and I don't like that.

I've always enjoyed Ruffino's. it gets a lot of hate on the f&d board, but it's the OT of the food world.

It's very good. Often times, the higher end restaurants that have been around for years aren't that good. (Ex: Juban's has declined greatly.. and then there are casual places like Ralph and Kaccoos and Drusilla Seafood that are DISGUSTING but still doing well due to being old)
Ruffino's has been around for a while, but it's still great. We went for Valentine's Day last year and I thoroughly enjoyed it.
* I really don't know much about the place, but I do hope they're using fresh and hard to get ingredients because some of the prices on the pasta dishes aren't fitting to the dish if they're using regular ingredients.
I am a huge Little Village fan because no pasta dish is above like $14 and it's awesome food.

my mom can't make roux... my dad has to make a bunch at a time so she can use it when she needs it

First of all, how adorable is she? Every episode is her making something awesome for her husband.. who is so sweet too.
She makes things, like Glass said, that are so simple yet look amazing. I have this cookbook that is composed of the best recipes taken from multiple cookbooks. They included some of hers and they're all great.

I'm a purist as well but I'll tell ya what...The Saviou's Roux is a pretty solid subistitute, IMO. Making a good dark roux from scratch usually requires at least a half hour of constant stirring, which gets old after you've been doing it for 20 years.

Lots of stuff...shrimp & crab quiche is really good. Spinach & cheese triangles (kind of like spanakopita) or mini pies.
I used to LOVE cooking. Now I almost hate it. Cooking for 7 people almost every day will do that to you.

i have a variety of specialties. pizza, spaghetti, ravioli, fried fish, anything with porkchops, lentil soup, fajoli, etc. my mom was a great cook so i learned a lot from her. whenever id stay at my dads he'd cook at home too. learned most of my gravy tricks from him.

umm...it's been awhile. i usually get the crabmeat cheesecake for an app and i've probably ordered the specials most of the time. Last I was there I had a Bass that was really good.

Yep, pretty good cook. Lasagna is my favorite. Also, pizza with a pesto sauce.
Macadamia crusted halibut is my most requested dish though with various sides.

I have been told I am an excellent cook. My Great Aunt taught me. I suppose my best dish is Beef Wellington with Marchand du Vin Sauce. I love to cook!
