With spinach I assume?

Most Alfredo Lasagnas have spinach in them. I am not an alfredo-pasta fan.. but to each their own..

what's your best dish?
that's a question chefs get asked all the time. it's also the hardest to answer. one chef said it best when they said "cooking is my job. everything should be my best dish"

eta, actually that chef was an arrogant ahole and they said everything is my best dish.

I had crabmeat cheesecake at Ruffino's once and it was awesome. One of the best apps I've ever had.

Honestly, my favorite pasta sauce is alfredo and red mixed. The baked ziti I mentioned a page back is made with tomato sauce and alfredo sauce mixed. It's got that tomato flavor, but rich cheese flavor as well.

As a cook, I'm deep, but not wide. I run the grilling/smoking, boiling, sushi, and some select entrees. I've learned from a billion different sources, written and verbal.

Granny and Mom are very good cooks, but they take shortcuts that I don't approve of, such as using canned broth.

How is the food in general at Ruffino's? I've never been to his restaurant but the owner and I were the king and the queen of a Mardi Gras parade a few years back. I heard it was expensive but never heard much about the food. It would prob be cool to go see him again though.
