Anyone meal prep breakfast burritos?

Breakfast is not a meal I typically eat, but after seeing some things online about breakfast burritos I got a little interested. They seem like an easy grab and go meal.
I have a few important questions.
- How well does egg refrigerate? How long will they last? If I made many burritos and froze some, does the egg hold up well?
-What are healthy ways of making them?
-Any ingredients yall would reccomend?

I'm really not going for super healthy when i decide to have a breakfast burrito, but they're always the bomb so heres what i use.
flour tortilla
eggs
bacon
jack cheese
sauteed onions, bell peppers, and jalapeños
avocado
red and green salsa
sour cream if you like it. i don't
i also add some torchy's diablo sauce on there as well.
i usually cook the bacon in the pan, and then cook the vegetables in the bacon grease, and then scramble the eggs last.
i always think they taste a lot better when the tortillas are toasted as well.
if you wanted to make my version healthier, i would say take out the bacon, sour cream, and cheese. then you would just have eggs, vegetables (sautéed in olive oil maybe to make healthier), avocado, and salsa. still sounds tasty to me.
as you can see, these aren't exactly light, so i usually make them when people are in town or I'm really hungover

I just nuke whisked eggs with shredded cheese and salsa. I use Ole Extreme Wellness low carb tortillas with a dab of sour cream. Ready in less than five minutes.

I've seen people make little mini quiche/omelet type things in muffin pans to meal prep

I don't normally, but I actually did breakfast tacos today.
Last night I browned some chorizo and some bacon. Removed from pan and wiped pan with paper towel (chorizo is unreal greasy). Sauteed onions. When onions were translucent, I added beaten eggs and scrambled with the onions. Seasoned with salt, pepper, cumin, chili powder, garlic powder, onion powder. When it was scrambled to my liking, I removed from heat and stirred in shredded Mexi-mix cheese. Added the bacon and chorizo to the mixture and stored in container.
Microwaved just fine this morning. I am full as hell right now.

My brother makes them up and then wraps them individually in foil. Warms in the oven for breakfast. I don't know how they freeze, but they'll keep well in the fridge for several days, at least, if not a little longer.

The plan is to make about a dozen on the first try. Alot of recipes I've found are for large quantities and they freeze them. I think I'll combine a few ideas yall have given me and sautee some vegetables with the eggs and add another protein like ground beef. Black beans seem popular too.

I actually looked into doing this a few months ago too, but the egg thing made me reluctant. Let me know how they come out brah.
Alot of the healthy recipes I saw had spinach and black beans with a whole wheat tortilla. If I did it, I would do egg, spinach, black beans, some sort of meat (chicken or turkey would be healthiest), some sort of veggies, and a little bit of pepper jack cheese. you can dip it in salsa or something.

I roll and freeze mine in wax paper. I pop them in the microwave for 1.5-2mins and I'm out the door.

Saw this on reddit awhile back. Looks pretty healthy with egg whites and turkey sausage.
Google "reddit breakfast burritos" and more posts will come up. People seem to have good results as far as freezing goes. Could maybe vacuum seal them if you're worried about it
