I make a big batch and eat for a week and they are still good. I don't prewrap them though.

Yep. I make a big batch, wrap them in parchment paper, wrap again in foil or plastic wrap, put them in a freezer safe bag, and freeze.

When ready to eat, I remove the foil or wrap, leave the parchment paper, and wrap in a damp paper towel. Set microwave on 30% power for 1:30, then full power for another 1:15. Time will vary depending on the size of your burrito and wattage.

I use a whole wheat soft taco size tortilla and (gasp!) veggie sausage. You can add in onions, peppers, frozen hash browns, cheese...I even tried vegan cheese once, but decided I'm not that dedicated.

Bottle of hot sauce on my desk completes the meal.

Thanks for the suggestions everyone. I took yall's ideas and made 16 burritos tonight. I used 12 eggs, 1 bellpepper, 1/2 onion, 1/2 cheese, 2 cans black beans, 12 strips of turkey bacon, and tomatilla sauce for topping.

Sauted some bell pepper and onion. Scrambled the egg and tossed in the cheese, scrambled some more.


In stead of ground beef or chorizo I decided to go with turkey bacon. Baked it in the over for about 15-20 minutes to get it crispy.

Once the eggs were cooked I mixed the bacon in with it.


The ingredients yielded 16 small burritos. They were smaller than I expected, but that's fine a big breakfast isn't what I typically go for anyway. Each one probably cost around $1 or less.

Sure, come on by.

@Darla, I think I will freeze about 10 of them and refrigerate the rest. They aren't super thick so it shouldn't take too long to defrost. I might just take one out the night before a and put it in the fridge.

Sounds yummy.

How are you going to reheat them? I don't know how microwave would be (possibly mushy and weird).. but a good alternative to waiting on the oven might be a press on the George Foreman. It'll take only a few minutes and crisp your tortilla up too.

Definitely try the chorizo one day. It is so spicy and flavorful that you don't have to season the filling as much. Also, 4miles made breakfast one day with these little guys:



If you're looking for something quick to toss into your egg scramble, these are great. They also come in turkey if that's your thing. I'm not too much of a turkey-bacon or turkey-sausage fan.

Dampened a paper towel and put in the microwave for a minute and a half. Wasnt soggy, hot and soft like a burrito should be.

I'll try those crumbles, normally I stay away from the processed food isle though.

Ah. I've never used them myself either. Just liked them when they were made for me. You must be one of those who actually likes the taste of turkey bacon ;) I also don't like soft steamed burritos. I always need that brown pressed crispy texture. So I think we just have different tastes here.

Yea its really not that bad. If I had a foreman or hot plate I would have pressed them.

Low carb tortilla (from target)
6-Turkey sausage patties (Sam's club)
6- Eggs(super market)


I keep them in the freezer and they taste fine.

Hmm so not much difference. Oh well, I saw it next to the bacon a few weeks ago and it is a few dollars cheaper than regular bacon so I got that instead. I like the taste, but apparently thats just me

I always make them fresh. If I'm in a rush I just do refried beans, scrambled eggs, cheese and salsa. I keep a jar of bacon fat and can scramble a couple eggs in just a few minutes. At the same time I spread some canned refried beans onto my tortillas, top with cheese, heat in the microwave for about 30 seconds. Then i throw the scrambled eggs and salsa on top and am on my way.

I should also mention I dice the turkey sausage up somewhat. It's not an outstandingly delicious breakfast but it is frugal and quick. It holds me over till lunch anyways.
