When done correctly, prime rib is fantastic. However I feel like it's not done correctly that often. Steak is a safer choice to get a good meal for your buck

I think if you judge prime rib based off the offerings at cheap casino buffets, shitty wedding receptions and Picadilly than you need to learn to visit better places and hang out with better people. Prime Rib done well is a treat. Prime Rib done shitty is shitty. Same with anything else. No food is overrated or underrated. It's just food. If you're eating bad food the burden is on you, not the dish.

There is a big difference between prime rib and "roast beef." I believe ribeyes do come from the prime rib.

It's a once a year kind of thing. With horseradish and au jus, it has its place.

I rate it that I like to eat it.

A burnt/bloody/salty hunk of rib roll is a gift from the heavens. Some of yous are crazy.

This. When TJ Ribs does it as a special, it is one of the best things you can order in Baton Rouge at any restaurant. A great prime rib is a thing of beauty.

I know they smoke it overnight in a smoker out back every single night. At least, they used to.

Is a nice thick piece of tender, flavorful beef overrated?
No
No

Also, would it be underrated if cooked sous vide style?

It's a culinary relic. Belongs at cheap casino buffets, shitty wedding receptions, and Picadilly.
Completely agree. I don't care much for it
