Anybody do only onions in their jambalaya?

Have had some discussions with folks recently that do not do onion, bell pepper, and celery. Onions only.

Anything more than 1 gallon I only use onions. Never had anyone eat it and ask why no bell pepper and celery.

If I decide to cook a jambalaya and all I have is onions, then yes, I'll use just onions. I'd say I probably use just onions instead of trinity probably 50% of the time i cook something that calls for it. Now a chicken stew, i won't cook it without bell peppers.

Onions, garlic and green onions.
Hot take here: Green bell peppers provide no actual flavor to the dish. When cooking crawfish or shrimp etouffee, I use red or orange bell peppers, depending on my mood.
I like stuffing green bell peppers, and I use them in my cornbread dressing because I don't want my 93 year old grandmaw to come all the way from her Thibodaux assisted living apartment and slap the shite out of me, but other than that, never buy them or use them when cooking.

I only use onions. Never had a complaint on why I don’t use peppers. Main thing with onion is to brown the hell out of them.

I’ve done it many times with large jambalayas for fundraisers or free jambalayas for someone. Saves time and money. I cannot see any difference. I think it’s better with bell pepper and celery but it also comes out just fine with onions only.

Onions only for me. I've done it with bell pepper before and I think it's fine, but not my favorite.

Have a buddy from St. Amant who always told me jambalaya shouldn’t have anything green in it. He made his with just onions and it is tasty.

I find with smaller cooks and not just jambalaya you’re able to pick up different nuances or flavors in a dish so I generally use all the ingredients.

Every now and then if it's just for me and the wife, I'll do a jamb with 2 large onions only.
Kind of gives it a bit of a sweet taste that I crave sometimes.

I sometimes purposely do not put green onions in my gumbo. I understand that I am being nonresponsive.

Have done just onions and onions/bells. I prefer adding at least some bell pepper. I never use celery.

I've never put celery in any gravy, sauce, jambalaya, so there's that. I always add bell pepper.
