Darla, this ones for you.

The next challenge is - Low Carb. I know a lot of people eat low carb for weight loss or other health reasons, and many have you're own favorite recipes - some are very creative. I'm interested to see what ya got. I know I am doing Keto off and on, and when I'm doing Keto, the challenges can be difficult - especially if the challenge requires a naturally high carb ingredient and I either have to cheat or get creative.

There are two ways to do this. You can make a dish that normally would not be a low carb dish and change it up to make a low carb version of it. Chocolate Chip Cookies made with almond flour and sugar-free chocolate chips, for example. If you change it up, please explain the changes you made to make it low carb if it's not obvious.

OR


You can just make a dish that is simply low carb. Bacon and and eggs, comes to mind.


I don't want anybody complaining about anybody else's dish over what is or isn't low carb. Sometimes low carb dishes have a non-low carb ingredient, but the quantity is so low that the dish doesn't have a lot of carbs. If someone submits a dish you do not think qualifies, then you can factor that in when you vote.

I like this for the challenge, because I think we'll see a wide variety of creative dishes - desserts, soups, appetizers, sides, and main courses.

I am proposing November 14th as the date. Far enough before Thanksgiving that it should not intefere.

Normal rules and regulations apply.

Let's hear your thoughts before we solidify - especially on the date.

Congrats to Jax and a very big thanks to Darla for running the show all this time. I know you've put a lot of time and effort into this and I hate that sucky people have caused you to quit, but I certainly don't blame you. I've only participated in 1 of the challenges up to now, but I always enjoy seeing all the creative entries and voting on them.

Hopefully someone will pick up the torch and keep this thing alive.

To throw an idea out there, in Nov or Dec, I’d love to see something holiday related: dressing, cranberry, cookies for Santa, etc. just putting the idea out there.

Yes, we can certainly even rotate handling the threads/counts each month if it's too much for one person. I can easily throw reminders on a calendar to post when it's my turn.

Not necessarily a bad idea, but I like the idea of having a committee rotating. That way we can swap out if someone is extra busy when their time comes, or if you have someone win who is not comfortable with it.
