Alabama White sauce

Anyone have a good recipe? Never done it but I want to try it on smoked chicken quarters.

Not an expert on it but this stuff is pretty good. Some grocers carry it.

I want to hate on the Alabama white sauce but that stuff is awesome with chicken. Go to sauce with Publix chicken tenders

The basic base for it is mayo, apple cider vinegar, sugar and black pepper. There are a ton of variations you can try based on your tastes. I've seen recipes with lemon juice, horseradish, garlic, cayenne pepper, and a number of other spices and ingredients. I prefer to keep it simple, and I don't really measure anything. Just make it to taste.
Mayo
Apple Cider vinegar
LOTS of black pepper
Sugar(just enough to take some of the vinegar bite out)
Garlic powder
Mayo

Great on smoked wings, toss em in it and throw em back on the smoker to get a little color.

Start with mayonnaise (about 2c)
Add apple cider vinegar until it doesn't taste like mayonnaise (1/4-1/3c)
Add sugar until the vinegar bite is tolerable (1/2-1c)
Add BBQ rub until you can taste it, then add a little more. (2-3T)
Finally a couple dashes of Worcestershire.
My "white sauce" has a pink hue from the rub but, I gets no complaints.
Add apple cider vinegar until it doesn't taste like mayonnaise (1/4-1/3c)
Add sugar until the vinegar bite is tolerable (1/2-1c)
Add BBQ rub until you can taste it, then add a little more. (2-3T)
Finally a couple dashes of Worcestershire.

I make an Alabama white sauce often. It is great on chicken but it is also amazing with pork steaks and smoked sausage.

I use this one.
Alabama White BBQ Sauce
Ingredients/Instructions
1 cup mayonnaise
1/4 cup apple cider vinegar
2 Tablespoons brown sugar
1 Tablespoon brown mustard
1 teaspoon lemon juice
1 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1. Whisk all ingredients together in a bowl until smooth and well combined.
Transfer to a lidded jar. Use immediately or let set in the refrigerator for 24 hours to let the flavors meld
together. Will keep 2 weeks in the refrigerator.

2 cups of Duke's mayo
3/4 cup of apple cider vinegar and water in a 50/50 ratio
1 tspn salt
1 tspn turbinado sugar
1/2 tspn butt rub
1 tbsp ground white and black pepper in a 70/30 ratio (2 tspn white and 1 tspn black)
The key is white pepper. The flavor profile is way different than black pepper and perfectly fits here. Alabama white sauce is perfect for chicken, but I don’t use it on anything else.
ETA: Don’t use any mayo other than Dukes.

I absolutely DESPISE mayo...it's the most repulsive condiment known to man. That said, Bama White, if done right, doesn't even give off a hint of mayo flavor...it's just used as the fat in a sauce. Try it, man, you won't regret it.
