advice question for 2 alarm chili

I'm not looking to spend four hours making chili from scratch.

I use the two alarm chili mix in the box. What can i do to give it some more flavor. Usually dice up some maters and onions, cook them down, then add the contents of box, garlic, beans, and the meat meat usually browned ground chuck.

What can i do to give it more flavor. Not trying to make it hot, just more tasty.

What are maters? The only thing I can suggest is extra seasoning: salt as an enhancer, garlic, chili powder.

dump a jar of salsa in it
crumble up some tortilla chips in it
add some chipotle peppers in adobo
add some bittersweet or dark chocolate
add a bottle of beer

all will work

I mix a 2 alarm chili and a can of McIlhenny chili base. 3 lbs of meat, add the things each calls for. Sometimes I sub some of the water for beer. And I add in kidney beans.

Add a couple of poblano chilis to your onions and cook them down. Then minced garlic.

A tablespoon or two of Better Than Bouillon Roast Beef Base

I know a few people who add a small can of Rotel for added flavor. It works well.

I brown an onion and a can of rotel, then brown my ground beef (i use 3lbs instead of 2lbs). All other portions are what the package calls for. When its been cooking for 20 minutes or so I toss in about 20 chocolate chips. Smooths out the flavor.

Many chili recipes use chocolate. Google it and you’ll find out why. I don’t use it, but I know about it.

Chili people are a close second to gumbo purists.

Put beans if you want. I add corn too.

MSG
masa (add in a tbs or two mixed with water. helps thicken and gives a nice flavor)
Chipotle peppers in adobo (canned)
Dark chocolate (I add cacao powder)
Use beef broth instead of water

Great example. Beans in chili are kind of like okra in gumbo, but opposite. Some claim okra has to be there for gumbo and some claim beans cannot be there for chili.

Chili purists define chili as stewed meat. The meat is chunked or ground coarse and the meat is stewed and there are no beans. This is why you see chili meat in the ground meat section at the grocery, it's a coarse ground. Coarse grinder plates are also referred to as chili plates. Kind of like andouille. Andouille began by hand cutting meat and has now evolved to coarse meat grinder plates.

That's all good, but chili has also evolved to a ground meat dish with no beans for hot dogs and usually beans for an entrée.

I'm 100% in favor of all types of chili. I'm in favor of people making it traditional or non traditional. It's all good!

If you were making a chicken chili. Why would you use chicken broth if you are making a beef chili? Beef broth is gonna enhance the flavor of beef.
